EFKRATO comes from our small family olive groves in northern Crete and is the optimized form of the olive oil we grew up with.
It is produced exclusively from the ancient Cretan variety Tsounati (monovarietal) which according to most Cretans gives the most delicious olive oil.
EFKRATO offers a unique combination of health benefits & gastronomic pleasure! Enjoy aromas of artichokes, green fruits, green pepper, freshly cut grass in harmony with the characteristic bitterness and pungency of the early harvest olive oil.
Although it started its course only in 2018, it has already won several distinctions and awards in international competitions.
We have a loving and respectful relationship with the olive grove that generously gives us back not only its fruit, but also snails, wild grasses (fennel, native capers, wild asparagus etc). As a result, the cultivation methods we use are much stricter than those of organic farming and practically impossible to apply in large scale production of olive oil.
We avoid the use of even substances approved for organic farming. The main way of fertilization is our “cooperation” with horses and sheep that give us organic manure in exchange for the wild grasses of the olive grove.
We take advantage of leguminous plants for nitrogen fixation in the soil rather than using artificial fertilisers. These plants coexist harmoniously with the olive trees and do not allow the depletion of soil nutrients which is often the case with monocultures.
The olives are selected by hand, one by one, and only those in excellent condition are used in the production of EFKRATO. Olive oil extraction is done every day, less than 6.5 hours after harvest. Only the batches with the best organoleptic characteristics are bottled.
Each of our choices has a significant economic impact, but the result, both in terms of organoleptic and antioxidant content, proves we have made the right ones.
EFKRATO’s acidity is below 0.3% (0.13% for the 2019 production), it contains 4 times more polyphenols than the limit allowing for a health claim to be made (according to Regulation 432/2012 of the European Union) and it has award winning organoleptic characteristics.
