Chapter 1: The poetry of olive agriculture
We chose to emphasize the exceptional terroir of the area and the olive varieties which have evolved and adapted to these specific conditions.
For this, we preserved the olive trees present in our olive grove for centuries and replanted (to proper positions) some new ones which have germinated naturally in our grove.
This practice yielded trees born and raised in this specific soil, well adapted to it so they need no use of chemical fertilizers or even irrigation.
Chapter 2: The poetry of oil production
While this terroir is one of the best in the world, it is not adequate to produce one of the world’s best olive oils on its own.
To accomplish this ambition, we equipped our business with state of the art technology and follow the best scientifically admitted practices.
We produce our olive oil under vacuum at a maximum temperature of 25°C and for very short time. This has a negative effect in the yield quantity, but guarantee its high quality.
Chapter 3: The poetry post-production
In order to ensure that the best final product will reach consumers, we take some post-production precautions after we produce our first drop of art.
The olive oil is carefully filtered and stored until bottling- at controlled temperature and under pressure of inert gas nitrogen. Bottling is done under vacuum, using non-refillable caps.
Finally, we tried to transmit the poetry behind our olive oil to a bottle design of minimalistic aesthetics.
